Got someone who is begging to work for you and is probably a perfect match? Turn them down and wait for the response. If they only take that as a further challenge to convince you they are the fresh graduate job candidate you can’t do without, then you got a winner.

Offering internships or part-time work is one way to get people into the position quickly while not committing to hiring them on a full-time basis. If they don't work out, you can always try again.
